New to the tribe.
I'm curious...and sorry if this is posted a lot...

I work long long hours and have trouble finding time to cook. I'm wondering how others deal with cooking and busy work schedules? Do you cook every day?

    Welcome to the tribe.
    I know your problem. What I do is cook for 3 or 4 days at one time. I'll start with a pot of brown rice. You can live forever on rice and it keeps well (3 days on the table and much longer if you put it in the fridge. A pot of beans. Lentils are the easiest because you don't have to soak them and they cook in about 45 minutes. I add veggies, like onions and carrots, sea veggie like nori or kombu (that's my miltivitamin) a little ginger powder, steamed greens like kale or collards...you can make a little miso soup for breakfast with oatmeal or rice with whole wheat toast. The beauty of this type of food is it still tastes great even if you eat it at room temperature (I don't like to nuke my food).

      I can do the pot of rice...that sounds easy enough. Too bad I'm not working in NYC anymore. It would be much easier that way...

      Do you find that leafy greens keep well? I think the steamed squash and daikon do a good job...but some folks have an issue with the smell of steamed daikon sitting in the office fridge...lol

        Greens take minutes to cook (never overcook them) and will keep for a couple days in the fridge. You are right that root veggies are the best for longer storage. Gomasio makes a good condiment for adding flavor to veggies. Adzuki beans and butternut squash is one of my favorites! I make small batches because it only lasts a few days. Try making your own sushi. Can you find umoboshi paste? If you want to try it, I'll post the recipe for everyone to see.
